Making large batches of soups, stews, or beans is a great way to stretch a dollar and have food on hand when you are short on time. The only problem for me is that, after the third day of leftovers, I am completely bored. What to do? I just chop up a bunch of fresh veggies to throw on top, which makes kind of a salad-soup. It’s a treat to beat those late winter blues, and it helps you get ready for the swimsuit season that is right around the corner. I had some lentil soup leftover today, so I dressed it up with radishes, cucumber, shredded carrots, scallion, avocado and yogurt. Winter doldrums – banished!
